too much vinegar not enough garlic and herb for me

i don't really like this version of a chimichurri. the prominent flavor is vinegar followed by a slight herbal note that i think is the parsley and a bit of garlic. i think of chimichurri as being a more herbal flavor profile and less vinegar. this would probably work well on chicken or even in a homemade salad dressing. on steak however it just doesn't work for me.

Interesting Mediterranean Twist on Chimichurri

I missed that this Gaucho Ranch Chimichurri Sauce is "Mediterranean." The taste kinda reminds me of Wishbone dressing mixed with chimichurri. The combo is an interesting twist, although I still prefer the classics in this case. I think it's better as a marinade than a dip. But, I might try it as a dressing for a salad with steak or chicken, and it should be perfect for that.

Interesting, Unique Flavor. Very Good on Chicken

I've never had a sauce like this, although it does remind me somewhat of the Greek flavor profiles to a degree - I suppose it does earn it's "Mediterranean" naming. It got an vinegar-herb flavor, although the vinegar flavor is light. The herb flavor is complex and savory - it reminds me somewhat of a classic American chicken marinade, but perhaps less sharp and pronounced. And it is very good with chicken. I've tried it with potatoes and beef as well, and it is good, but chicken is where it's at. Overall really good. Definitely a worthwhile sauce to try out - if you've never had this before, it's truly unique, but not so far off that it won't remind you of familiar flavors.

This Mediterranean chimichurri sauce was delicious. Used on fish but can be used on almost anything. $10.50 is not a bad price for the bottle.

Savory chimichurri

I love chimichurri sauce so I decided to try this "mediterranean" version from Gaucho Ranch. I'd describe the flavor profile as more savory than spicy. Vinegar is the dominant flavor followed by subtle hints of basil and thyme with the parsley and garlic mostly lost in the background. It went very well with steak seasoned with sumac and harissa for a bit of heat. I think it would also work well as a dipping sauce with French bread.
